Keto Pumpkin Spice Coffee Creamer (Sugar-Free & Delicious!)

Ingredients
1 cup unsweetened almond milk (or macadamia milk)
1 cup heavy cream (or half-and-half for a lighter option)
2 tbsp pumpkin purée (not pie filling!)
1–2 tsp pumpkin pie spice (see DIY mix below)
1–2 tsp pure vanilla extract
2–4 tbsp keto sweetener of choice:
Allulose (for best smoothness), Monk fruit/erythritol blendStevia (go slow, it’s potent!)
Instructions

Warm it up: In a small saucepan, whisk together the almond milk, heavy cream, pumpkin purée, sweetener, and pumpkin spice.

Simmer: Heat gently over medium heat until steaming (don’t boil). Whisk often for about 5 minutes until everything’s blended and smooth.

Add vanilla: Remove from heat and stir in vanilla extract.

Strain (optional): For that café-smooth texture, pour through a fine mesh strainer or cheesecloth.

Cool & store: Transfer to a glass jar or bottle and refrigerate. Keeps 7–10 days. Shake before each use!
DIY Pumpkin Pie Spice Mix
Make your own and keep it handy for all your fall recipes!
3 tbsp cinnamon
2 tsp ground ginger
2 tsp nutmeg
1½ tsp allspice
1½ tsp cloves
Use 1–2 tsp per batch of creamer (or adjust to your taste).
